Here in North Carolina it’s HOT!! That means it’s time for all the summer recipes that we love! We have been loving our veggie garden this summer. We are growing several varieties of tomatoes, cucumbers, bell peppers, sweet peppers and of course all of the herbs. Basil and rosemary are two that we use a lot! I needed to use some of our Roma tomatoes this week and wanted to make a healthy salad! So I browned some cut up chicken and seasoned it with garlic, Italian herbs, salt and pepper. I cut up and added our fresh tomatoes, crumbled feta cheese and made a delicious tahini dressing! It was fabulous! So quick, simple and tasty! See below for tahini dressing recipe!

Tahini Dressing Recipe
I don’t typically use exact measurements for dressings, because I like to tweak the taste for what we like. So these are really just guesstimates! (Sorry to those who like exact measurements!).
We also like to use organic ingredients whenever possible! Did you know that it’s best to buy EVOO Olive Oil in a dark glass jar? EVOO is the highest grade of olive oil, great for cooking, milder foods and everyday use. Dark glass protects the oil from UV radiation, guaranteeing the best possible preservation of its color, flavor and aroma and improves shelf life! Who knew?!
4 TBSP OF TAHINI (Like this one!) A CLOVE OF GARLIC (MINCED) 2 TBSP OF OLIVE OIL (Like this one!) 1 TBSP FRESH LEMON JUICE 1 TBSP OF HONEY (Local is best!) OR MAPLE SYRUP (Like this organic one from Vermont!) 2 TBSP OF WATER (to thin) SALT TO TASTE
