Peach Cobbler

I just happened to stop in Aldi the other day because I was craving yellow squash. They didn’t have any, but they did have SOUTH CAROLINA PEACHES!! If you know you know!! They are the absolute best peaches on the planet! Well at least the best in the US of A! I remember every summer during the week of July 4th heading with my family to Myrtle Beach, SC. My parents both worked in factories and they were always closed this week each year. Back then Myrtle Beach was nostalgic, wholesome, clean and family oriented! I have the best memories of the playing in the ocean, amusement rides, pancake houses for breakfast and walking up the strip with my older cousin and favorite friend every night! No, I would never have let my girls do that, but those were different times! Anywho, on the way home we would always stop at one of the many roadside stands for peaches and we usually got to eat one on the way home! So, needless to say when I saw the peaches I immediately grabbed some to make the best peach cobbler! See below for recipe! Again you can tweak the amounts of sugar and cinnamon to your liking! Best served with Butter Pecan ice cream! (As many of you know, I generally like to eat healthy and organic, but I don’t skimp on sweet treats that I don’t make very often!)

Side note. Did you know that cast iron is non-toxic and eco-friendly! I also read that cooking in cast iron on the regular helps raise iron levels. I began doing this a year or so ago and I’m no longer having to take iron supplements! (**Disclaimer: I am not saying I know this was totally a result of using cast iron or that it will work this way for you.)

CAST IRON PEACH COBBLER

5 OR 6 LARGE RIPE PEACHES CUT IN BITE SIZE CHUNKS. 3-4 TBSP OF LEMON JUICE (OR BOURBON IF YOU HAVE ANY). 1/2 CUP OF BROWN SUGAR. 1/2 CUP OF GRANULATED SUGAR 1-2 TBSP CORN STARCH SPRINKLE OF CINNAMON.

FOR THE BISCUIT

1 1/4 CUPS OF FLOUR 1 1/2 TSP OF BAKING POWDER A FEW PINCHES OF SALT A STICK AND A HALF OF BUTTER 2/3 CUP OF MILK 1 TSP OF VANILLA

PREHEAT OVEN TO 375 DEGREES. COMBINE THE FIRST 6 INGREDIENTS IN YOUR CAST IRON SKILLET (Like this one!) AND COOK FOR A FEW MINUTES ON MEDIUM HEAT.

IN A SEPARATE BOWL MIX THE FLOUR, BAKING POWDER AND SALT AND CUT IN THE BUTTER INTO LITTLE CHUNKS. MAKE A WELL IN YOUR MIXTURE AND ADD THE MILK AND VANILLA.

SPOON THE MIXTURE OVER THE PEACHES IN THE CAST IRON AND COOK FOR 30 MINUTES. (DEPENDING ON YOUR OVEN.)

Serve hot with a dollop of butter pecan ice cream!! Yum!!
